Meet Chef Pamela
Chef Pamela is the host of “Charlotte Cooks” TV show on WTVI PBS in the Charlotte, NC market. She is the author of the cooking blog Spoon Feast, where she writes about all kinds of things relating to food.
Pamela has been a Certified Executive Chef for over 15 years and has taught culinary school for over 10 years, which has been central to developing her coaching skills, as she supports her students, watching them grow and develop in the demanding kitchen environment.
Training as a Certified Health Coach
In an effort to further her mission of helping others to eat healthy, Pamela sought training as a Health Coach, receiving her Certification from the Institute for Integrative Nutrition (IIN), a cutting-edge Health Coach Training Program located in New York. Training at IIN has honed her coaching skills to best serve individual clients dealing with a wide variety of food related health issues.
During her health coach training, Pamela studied over 100 dietary theories, practical lifestyle management techniques, and innovative coaching methods with some of the world’s top health and wellness experts. Her teachers included Dr. Andrew Weil, Director of the Arizona Center for Integrative Medicine; Dr. Deepak Chopra, leader in the field of mind-body medicine; Dr. David Katz, Director of Yale University’s Prevention Research Center; Dr. Walter Willett, Chair of Nutrition at Harvard University; Geneen Roth, bestselling author and expert on emotional eating; and many other leading researchers and nutrition authorities.
Her education has equipped Pamela with extensive knowledge in holistic nutrition, health coaching, and preventive health. Drawing on these skills and her knowledge of different dietary theories, as well as her practical knowledge as a Professional Chef, she works with clients to help them make lifestyle changes that produce real and lasting results.
In addition to Health Coach Training
Pamela is a certified chef on many levels. Through the American Culinary Federation (ACF) she holds Certified Executive Chef and Certified Culinary Educator credentials; she is a Certified Dietary Manager and Certified Food Protection Professional through the Association of Nutrition and Foodservice Professionals. Chef Pamela also holds a Dual Role as both Instructor and Exam Administrator through the National Restaurant Association for ServSafe™, a professional food safety training program.
Pamela sees a great need for helping people to understand what to eat, how to choose healthy foods, and how to cook them, so that they explode with flavor – without the use of highly processed ingredients.
People who are prescribed a new diet need close guidance to show them how to make the transition from old habits into new, healthier habits. These kinds of changes don’t happen overnight. Change requires support and encouragement in order to be successful and make those new habits stick around for a lifetime.
Pamela is a chef on a mission to increase the awareness of healthy, nutritional eating and to help her clients’ lead full robust lives. She believes in the natural ability of the body to heal itself and to promote good health through a good diet of whole, healthy, flavorful foods.
